Roasted Pesto Potatoes


500g of Gourmet Potatoes
Genoese Plant-Based Pesto
Olive oil
Sea salt
Thyme leaves


Lightly coat gourmet potatoes with olive oil and 1 tbsp of Genoese Plant-Based Pesto, add a sprinkle of sea salt.
Roast in oven dish at 180°C for 30 minutes or until soft and golden brown
Remove from oven and serve with sea salt, cracked pepper, a sprinkle of thyme leaves and a generous helping of Genoese Plant-Based Pesto.
