500g cooked, flaked salmon
1 cup breadcrumbs (preferably Panko crumbs)
¼ cup Genoese Fresh Basil Pesto
1 tbsp lemon zest
Mix all ingredients together and form into patties.
Heat a small amount of oil in a pan on medium heat and cook, 2 to 3 minutes per side.
Serve with tartar sauce or mayo mixed with Genoese Pesto to taste.
