2 cups raw Orzo (or Risoni) pasta
1 green capsicum diced
1 fresh chilli diced
3 tbsp sundried tomatoes (or Genoese Sundried Tomato pesto & Cashew CHUNKY DIP)
Zest and juice of 2 lemons
1 tbsp Genoese Fresh Basil PESTO DRIZZLE
(optional 2 small chorizo sausages sliced thinly)
Boil the Orzo pasta (add a pinch of salt and 1 tbsp olive oil to the water) until al dente, drain and cool.
Combine with all other ingredients, drizzling through the pesto Drizzle.
Allow to stand for at least 1 hour then serve.
