3 lamb racks
4 tbsp Genoese Fresh Basil PESTO
2 tbsp olive oil
Salt and pepper to taste
Preheat oven to 200˚C.
Coat the upper side of the lamb racks with pesto and leave to rest for at least 1 hour.
Place lamb racks in a meat dish, drizzle with the olive oil and season with salt and pepper.
Roast for 30 mins until slightly pink in the middle.
Rest covered in baking paper and tea towels for 10 mins.
Carve between the bones and serve.
