4 slices ciabatta
400g cherry tomatoes
2 cloves garlic, minced
250g fresh mozzarella, sliced
2 tbsp Genoese Fresh Basil PESTO
Halve tomatoes and saute with the garlic in an oiled pan until they just start to break down (about 10 mins).
Toast bread. Poach eggs.
Layer cheese, tomatoes and eggs on the toast and top with pesto.
