3. What
is Pesto and Tapenade? 
The word pesto actually
means 'to pound' in Italian. The product
pesto is a blend of ingredients usually
including fresh herbs, garlic, pine nuts,
olive oil and Parmesan cheese.
Tapenade is a classic condiment from Provence
in the south of France.
It is made from a mixture of olives, olive
oil, capers, anchovies and lemon juice.
( Genoese tapenade does not contain anchovies
).
4. How
can I use Genoese Pesto and Tapenade?
The only limit is your
imagination. All the products can be eaten
alone with crackers, as part of an antipasto
platter, or in dips or sauces. They can
be eaten hot or cold and add fantastic flavour
to meat, fish and vegetarian dishes. See

5. Can
you give me recipe/ product ideas?
YES. Recipes are available
free from our online database. This will
be added to as new recipes are developed
and collected. Industrial customers currently
use Genoese products to add value to their
own products such as breads, cheeses, sauces
and pastas.

unique for you using Genoese existing or
new Genoese products.
6. Why
can I use so little Genoese Pesto in my
recipes? 
Because Genoese Pesto has
such an intense flavour. This is achieved
by using the tastiest fresh herbs and ingredients
with quality olive oil to infuse the flavour
through your whole dish. Altogether Genoese
Pesto and Tapenade add VALUE.
7. How
fresh is Genoese Pesto?
Very Fresh! Most products
are made weekly and carry a 3 month best
before date. The products must be kept refrigerated
to maintain quality and food safety

11. What
testing is carried out on Genoese products?
Regular microbiological
testing of all products is carried out in
accordance with Ministry of Health guidelines.
We have a HACCP based food safety programme.
A Certificate of Analysis can be prepared
for those customers who require it.
12. What
is the Genoese Guarantee?

13. Are Genoese products
available all year round?
Yes, we are able to produce Pesto and Tapenade
fresh all year round due to our dedicated
suppliers of herbs and other ingredients.
14. How do Genoese products
hold their colour and taste on the plate?
The process we have developed ensures there
is no bacteria present in the product to
affect it’s appearance or taste once
it is plated.
15. Why shouldn’t
I make my own? 
Because we can save you the expense of
your time to make it, storage and wastage
of expensive ingredients. Our quality is
excellent and consistent. Genoese pesto
will have a longer shelf life without deterioration
in appearance if it is kept chilled and
no bacteria is introduced to the pot from
a dirty spoon or finger for example.

regulations does the product conform?
Genoese Foods is an Agriquality Approved
